Sophie Irene Van Hyft was born March 16, 1929 at Mitchell, SD to Adolph and Rosy (Duncan) Pedersen. She attended school at Badger 44 and then moved to the Plano area and graduated from Plano High School. On May 4, 1974 she married Frank P. Van Hyft at Mitchell.
She was employed in Mitchell at the Frisco Café for twenty-three years, the Landmark Café and Dick’s Café. When she retired she had been employed in the café business for a total of forty-six years. In 1998 Sophie joined the RSVP and over the years volunteered at the Salvation Army, American Legion, DAV, VFW, RSVP Thrift Store, Social Services, Corn Palace and the James Valley Community Center. Frequently she drove people to Sioux Falls for doctor appointments and to the airport. She had a great sense of humor, loved meeting people, playing bingo and had a special place in her heart for cats.
Sophie is survived by her siblings: Arnold (Clara) Pedersen, Huron, SD, LeRoy (Kathy) Pedersen, MN, Arlene (Don) Mason, Platte, SD and Rose Marie Schroeder, Huron, SD; numerous nieces and nephews; and special friends, Shirley Jenkins and family.
Sophie was preceded in death by her husband, Frank (1989); her parents; one brother, Elmer Pedersen, a brother-in-law, Allen R Schroeder and a sister-in-law, Carol Petersen.
